You'll need:
1/2 C. Cooked brown rice
1 piece Tilapia
Veggies - I used:
Shredded carrot
Avocado
Pepper
Onion
1/2 Mango
Cilantro
Old bay
1 Handful of baby spinach
Squeeze of lemon juice
Bake the fish accordingly.
If you'd food prepped you can simply heat up your rice, if not you'll want to prepare that next. While the fish is in the oven you can cut up your veggies. Feel free to chose your own! Those of you that have food prepped, aren't you glad you did, this just got a whole lot easier! I chose not to sauté them but you totally could! Once the fish is cooked and the rice is ready, lay the rice down on the plate first in a cute little pile. Place the fish on the rice! This is where I sprinkle a little old bay on the fish, you could add if before you bake it as well! Throw on some of your chopped veggies and squirt of lemon juice and if you enjoy salsa add a tbsp (all natural no sugar added). P.S. Don't be afraid of the mango, it's tasty I promise. And go easy on the cilantro because a little goes a LONG way!
I ate it with a handful of spinach.Yum.

The #hungryhungryhubby version:
Swap the rice for a soft flour tortilla. He added lots of salsa and shredded cheddar and I got him to eat spinach. Win. Win. I also surprised him with his favorite seafood counter item. God only knows what's in them. He swears they are delicious. Whatever. They were cheap and it makes him happy!
If your husband doesn't eat veggies I feel bad for you son, I got 99 problems but that ain't one.. Haha. I had to.
