Chocolate Ganache Truffles

No, this is not the waist friendly recipe that I had mentioned in my previous post. And I will caution you ahead of time.. These little babies contain HEAVY CREAM! But no worries clean eaters, your recipes are coming! 

Don't let the fancy liners fool you! This is a SIMPLE recipe with only two main ingredients! Just imagine how impressed your valentine will be when you say you made these pretty little babies! 

You'll need
1 cup heavy cream 
8 oz chocolate  
(I doubled this) 

I used semi sweet chocolate bits, but you can use any variety. You can also use two varieties such as milk and semi sweet if you'd like. You will also need different ingredients to roll the truffles in. I made this recipe on a whim so I had to use what I could find in my cupboards! The possibilities are endless! I used shredded coconut, heart shaped sprinkles, cocoa powder, cookies and cream bits, and vanilla sugar sprinkles! 
I would also suggest powdered sugar, mini chocolate bits, nuts/pistachios, chopped dried fruit, nonpareils... The list could go on and on! Now on to the fun stuff! 

First, bring the cream to a boil on the stove. Grab a whisk and stand over the pot! The heavy cream will boil QUICK! You will notice that it will start to bubble on the sides of the pot first and a thin film will cover the top. Whisk the film away and you will be to rolling boil in no time! As soon as it boils up turn the burner off and add the chocolate! Whisk until the ganache is silky smooth! You don't want to poke around once the chocolate hits the pot because it could potentially burn on the bottom! If your afraid of this happening you can remove the pot from the stovetop. You can also pour the hot cream over the chocolate in a separate dish, if you choose this method let the cream melt the chocolate before whisking. You can add a pinch of salt if you'd like.
Pour it into a container and let it cool off before you put it in the fridge! I let mine sit overnight! 
The ganache is ready when it has become solid! You will be able to spoon it easily. I used a table spoon to scoop the ganache out and the truffles were about the size of a gumball! It made about 25 truffles. (I didn't have a melon baller but that will save a lot of time if you do!) When you roll the ganache into a ball keep your hands damp this will keep the ganache from sticking to your fingers. Remember the heat from your hands will melt it, so don't play around making perfect balls.. You can always shape them after they've been coated! 
I separated my rolling ingredients into bowls and made 5 balls at a time.I tossed them each in one of the bowls after I rolled it. I wouldn't make more than 5 balls at a time because they will get soft and too hard to handle. You can even put your container of ganache on ice while your making the balls! This will help it stay solid longer.
