Egg & Avocado Bake w/ Turkey Bacon Crumble

I have to be honest I'm not a huge fan of Avocado. I'm on year número dose of trying to "acquire" a taste for it. Ha! But don't get me wrong, I'm not a hater. It's one of the healthy fats and for that reason I try to eat it! I've seen this concept of an egg inside an avocado several times. You've probably seen it on Pinterest yourself! I've never really looked into any recipes but I have made a dippy egg in the oven before, so I understood the concept. 

Before we dive into the recipe Im going to apologize ahead of time if I bust out a rap lyric in the middle of this, I'm currently listening to hip hop radio on xm. #sorrynotsorry 

What you will need:
1 avocado
1 small egg 
Chopped red pepper 
Chopped red onion 
Fresh Parsley 
Paprika 
Pepper 
Pinch of gluten free bread crumbs (optional) 
1 slice Turkey Bacon 

Start by preheating the oven to 425 degrees. Then, cut the avocado in half long ways! If your using half. Use the half without the pit. Keep the pit in the other half until your going to use it to keep it from going bad. Next, crack an egg into the center of the avocado, it will act as a bowl for the egg to cook in! You can add the pepper and paprika to the top of the egg as well as the bread crumbs. Use only a pinch of each.
Put the avocado in a nonstick pan and bake for 20 mins. If you haven't food prepped, take this time to chop the onion and pepper! You'll also want to make your turkey bacon and chop it finely. Remember to keep checking the egg, because you can overcook it!
When it's just about perfect sprinkle the pepper and onion over the top of the egg and bake for another 3 minutes! Add bacon crumbles and parsley if you'd like before serving. Yum!
