Clean Banana & Coconut Baked Oatmeal


I like my bananas frozen! But occasionally I will let a few sit out! And everytime I do I end up wasting them! Sound familiar? So instead of letting my bananas go bad I whipped up some clean baked oatmeal! 

You'll need: 
1 C. Organic Oats
1 Large Egg
1/2 Tsp. Baking Powder
1 Tsp. Cinnamon 
2 Bananas
1 C. Soy, Almond, or Coconut Milk
2 Tbsp. Coconut Oil
Pinch of salt 
1 Tbsp. Raw Honey

Preheat oven to 375 degrees. Spray an oven safe container with Pam or my favorite, coconut oil non stick spray from Trader Joes. Cut bananas into slices and combine the first 9 ingredients! Put the mixture into your oven safe dish, it should look something like this: 
 
Mix the topping ingredients together and sprinkle on top of the oatmeal before you place it it the oven! It should take about 35-40 minutes!

Topping:
1/4 C. Oats
2 Tbsp. Organic Shredded Coconut  
1 Tbsp. Chopped Unsalted Almonds
1 Tbsp. Flax Seed
Raw homey for drizzle!

As you patiently wait for it to be done just take in the delish smells coming from your kitchen. The cinnamon and honey coming together, the coconut toasting...mmm! I enjoyed my coffee while watching Kathy Lee & Hoda of course! Now let's fast forward 40 mins..

I ate my oatmeal hot out of the oven with a splash of silk! Remember you can easily switch up the ingredients like banana and coconut for instance aren't everyone's favs. I recommend apple and dried cranberries!
