Spinach & Eggs Breakfast "Salad"

The "out of the box" way to eat an egg. I fall into the typical egg white routine in the morning, so when I'm feeling extra ambition I'll whip (10 mins max) this up but don't get me wrong, I enjoy an overly sweet breakfast occasionally with my coffee.

You will need:
An eggy 
1 slice of turkey bacon
Handful of spinach 
Mustard 
 *veggies 

Start by making a dippy or sunny side up egg & 1 piece of turkey bacon. I found this coconut oil spray at trader joes after I read good things on Instagram about it & I'm glad I did because I'm now a big fan! I also added Italian seasoning to my egg! 
Chop a handful of baby spinach
Lay the chopped spinach in the bottom of a bowl. You can also add other veggies you'd like, don't be afraid to adjust the receipes to your tastes. Healthy options only doe. ( yes I say doe, It makes me laugh everytime #getoverit ) 
Mix a teaspoon of mustard with a half teaspoon of water. Cut the bacon into small pieces. Drizzle the mustard over the spinach and the egg. Add the bacon on the side or you could also mix it in with the spinach before you add the egg! You can also add fresh ingredients to the top as well! I chose tomato! 
I love the combo of mustard and greens & the turkey bacon cuts the acidity of the dish making it a treat for your mouth. And possibly hit at brunch ?!
