Cauliflower Sauce

This recipe is the bomb dot com. It just changed my life. I already have a bunch of ideas brewing for flavor combos and uses! I've seen it on Pinterest and probably even have a recipe pinned, but I knew what I wanted mine to taste like and what I had in the fridge! I'll have to compare this to other recipes, this was my first attempt! 

What you will need:
1 cup cooked cauliflower 
1/4 cup cottage cheese 
1/2 tsp garlic powder 
1/4 tsp chopped parsley
1 chopped scallions 
1 swiss cheese wedge (laughing cow)
1/4 cup soy/almond milk
1/8 tsp salt

First cook the cauliflower. Then throw all the ingredients into a food processor. Blend for about 2 minutes on high and voila! It's really that easy! You can taste the sauce while it's in the processor to make sure it's to your liking. I ate it over spaghetti squash with roasted red peppers, red onion, and a slice of chopped turkey bacon. Throw your food prepped veggies in a hot pan for a couple of minutes and serve over the squash and sauce! Bacon is optional! 
Side note: Prep your squash by poking holes into the outside of it with a fork. Then place it on a plate and microwave it on high for ten minutes! When it's cooled, cut it in half long ways. Scoop out the seeds and "guts" in the middle with a spoon. Then take a fork and scrape the sides of the squash to release the "noodles". 

You could easily add this sauce over steamed veggies or dip raw veggies into it as a snack! If you like this recipes be checking back for more!
