Sadly I couldn't get this up in time for yesterday but hopefully you can find another reason to make this easy receipe
What you will need:
2 Cans black beans
2 Cans black eyed peas
2 Cans white hominy
3 Bell Peppers
- I use orange yellow and red
3 scallions
1/4 cup chopped cilantro
1/4 cup chopped parsley
1/2 tomato
1 bottle of fat free Italian dressing
- You can also use zesty Italian it just has more calories and fat. This would be the #hungryhungryhubby version!
Drain the water from the beans and white hominy and combine in a bowl. Chop the peppers, tomato, and scallions. Combine with beans. Finely chop parsley and cilantro! Combine with the rest of the ingredients! Pour 1/2 of the dressing into the bowl and stir! You can add as much or as little as you'd like! If your making this ahead you may want to start with half a bottle and add the rest before you serve it! You can enjoy this plain for a "close to clean" treat! Or you can also serve with baked tortilla chips!
