While I have learned to be very disciplined, I do crave those dang samoa cookies. The ones with the shortbread bottom covered in caramelized coconut flakes and drizzled with the most heavenly chocolate! Now you remember..
Well have no fear the clean samoa is here! I've been pondering the idea of this clean cookie for about a week now. I may have even pinned a few recipes but I never have everything on hand that other recipes call for so I made my own!
What you'll need:
Base cookie
1 cup oat flour (ground oats)
1 and 1/2 cup coconut flour
3 whole eggs
1 tsp organic blue agave
1 tsp baking powder
1/4 cup coconut oil (melted)
2 scoops vanilla protein powder
1/2 capful vanilla
Blend it all together in your mixer until it's all incorporated! It will form a nice solid, dense dough.
Preheat your oven to 250. Roll the dough out on parchment to prevent it from sticking! Roll it out so it's about a 1/4 inch slab.
I happened to have circle cutters but if you don't you can use a glass and maybe the lid to a chap stick tube?! I feel like those would be close to the size that I used! Ha!
Mine made about 40 cookies! Put them on a cookie sheet with parchment paper! They won't expand so don't worry about getting them close together on the sheet! I left mine in for 10 minutes, but I would set a timer and check them every 3 minutes! They might get a bit more golden, but watch the bottoms!
"Caramel" coconut layer:
8 Dates
1/2 cup warm water
2 tsp blue agave
6 Tbsp organic coconut (toasted)
While the cookies are in the oven soak 8 full sized putted dates in 1/2 cup warm water! Soak them for 5 minutes. Toast the coconut on the stove in a pan on low until golden brown. Then blend all the ingredients, including the water, in the food processor! Spread a little of that mixture onto the cooled cookies like pictures above!
If you want, you can toast more coconut to add to the tops of the gooey date mixture! For the chocolate, mix 2 tbsp of coconut oil with 2 Tbsp of unsweetened cocoa powder and microwave for 16 seconds! Mix the liquid and pour into a sandwich bag! Snip off a very little bit of the corner of the baggie! Drizzle mixture over cookies! Let sit and enjoy!
