"Crabby Pants Peppers"

"I'm sorry for what I said when I was hungry". That is an on going joke in this house! So "crabby pants peppers" seems fitting for this easy snack/appetizer. They will turn a #hungryhungryhubby into a #happyhubby. 

I have been..let's call it "trained" to make snacks on the fly with whatever I can find in the fridge! And this recipe is a winner for a few reasons. It's cheap & it's quick & it's a crowd pleaser. Possible Super Bowl finger food ?! #sundaynightsnack

You'll need: 
Sweet Mini Peppers 
Store bought crab dip
Shredded cheddar cheese
*scallions to top them off 

I can find packaged "crab" dip just about anywhere around here for likeeeee $3.00, making it a #hungryhungryhubby staple. I can also find it at the grocery store at the seafood counter! And I also have at least 20 different ways to use it! I can thank my husband for that ability, he will only eat leftovers if I can completely transforms them. I'm sure some of you can relate! 

First:
Preheat oven to 350 degrees. Wash and cut peppers in half, I cut the stems off. Remember you don't have to use all the peppers if your only making it as a snack! Usually the dip and peppers come in resealable containers. 
 *Before everyone asks, the knife is from QVC! 

Next: 
Spoon the seeds out, and fill the halved peppers with the dip, sprinkle the cheddar cheese ontop! Pop them into the oven for 10 minutes. This is my husbands favorite part. Watching the cheese melt over onto the pan. The more cheese the bigger his grin. Oh how I long for his metabolism or good genes or whatever it is that makes it just not fair! Ha. 
 
To top it off add scallions or chopped red onion, or if you want to be real fancy add chopped bacon. 
 
You know I'd make a healthy option. 
Swap the dip for a laughing cow cheese wedge. One wedge will go a long way! Then stuff the peppers with quinoa & sprinkle a small amount of fat free mozzarella! 
I guess these aren't clean but at 35 cals I'll take it people. I have read over and over again if you can't pronounce the ingredients don't eat it. But in real life, I don't think the two funny sounding words are going to make or break me. I think the wedges help me to stay consistent!
