Clean Peanut/Almond Butter Cups

I first saw this concept on Instagram. The picture of what looked like a Reese's  cup was titled "so good they are even healthy". Say no more. As I read the discription I found out that the recipe was adapted from a recipe found on the The Whole Pantry App. 

I've made these several times. And I've tried different variations. Raw honey makes the cups a bit sweeter. Flax seeds add a nice crunch. I've even added protein before for a post workout treat! But because I posted those decadent truffles, I wanted to give my fellow clean eaters a fair trade! 

You'll need:
1/4 C. Unsweetened cocoa powder
1/4 C. Coconut Oil
1 Tbsp Almond or Natural Peanut butter
1 Tsp cinnamon

Add the ingredients to a microwave safe bowl and melt in the microwave for 30 seconds. Stir the melted mixture until it becomes smooth.
For this next step you will need a plastic candy mold or an ice cube tray. When I don't use the mold I use a silicone ice cube tray! Fun shapes are welcome! 
Spoon the chocolate into the bottom half of the tray and place the tray in the freezer for about 10 minutes! 
Once the bottom layer has become solid, spread a little almond or peanut butter in the center of the cups! 
Then use the remaining chocolate to cover the tops of the cups! You can then sprinkle some shredded organic coconut, or because it's vday week.. HEART SHAPED SPRINKLES!
Place the tray back in the freezer to solidify the cups! Because these are made of coconut oil they must stay in the freezer or they will melt! So don't box these up for your valentine unless you include a spoon! Ha! 

I make these as part of my food prep. They are sure to satisfy your sweet tooth!
