Kebabs w/ Cool Yogurt sauce

Whoa! Today was a scorcher! On days like this I find myself pondering a little harder over what to make my husband for supper. My Everyday with Rachel Wray had been laying unread on the counter. That's when it came to me, Kebabs! I have to admit I still haven't really leafed through the magazine yet, and no, this is not one of her recipes... Ok so kebabs ✔️ .. Now I needed a sauce. (because my husband loves sauces) I knew I had plain Greek yogurt on hand and that it would be perfect on this hot day! How refreshing! So yogurt sauce it is! 


What you will need for the kebabs:
Steak cubed (meat of your choice) 
Red or white onion 
Corn on the cob 
Bell pepper 
Whole mushrooms 
Asparagus 

Olive oil 
Salt & Pepper 
Steak Seasoning 
(I use McCormick) 

Wash and dice veggies into large chunks. 
I cooked my corn in the microwave for 2 minutes to soften it and then cut it into three pieces. I also cut the heads off the asparagus and didn't use the stem. Cut your meat into chunks but remember to use a separate cutting board peeps! Drizzle olive oil over the veggies! Salt and pepper them and sprinkle your protein with proper seasoning! For steak use McCormick Montreal steak seasoning and for chicken use Montreal chicken! 

SPICE IT UP: You can also marinate your meat, I suggest Greek or Italian dressing! And if you like ranch, place the cut veggies into a ziplock bag, drizzle with olive oil and add half a packet of ranch salad dressing mix. Shake the bag! Voilla! Instant flavor! 

Carefully start building your scewers! I chose to alternate the veggies and meat but you can do separate scewers if you'd like. If your doing this family style you can let everyone build there own for less stress at supper time! My husband grilled the kebabs on medium high heat until the meat was medium rare. 

For the yogurt sauce
3/4 cup plain Greek yogurt 
1 Tbsp of horseradish mayo
(My husbands new fav) 
1/2 tsp garlic powder
1 tsp dill weed 
Scallions are optional 
replace the mayo with ranch*.               

Mix all the ingredients and top with chopped scallions! You won't believe how refreshing it is! And for those of you who are currently turning your nose up to the thought of a yogurt sauce should just wait a second.. Plain Greek yogurt has a taste similar to sour cream! But with benefits! I also made matchsticks frenchfries and the sauce was "killer with them". #hungryhungryhubby approved. 

Who thinks that's a great slogan for a cook book ?! Maybe in the future ..
